Millet Noodles Recipe
Ingredients:
- 200g Millet Noodles (Kodo, Barnyard, Little, Foxtail, or Multi millet noodles can be used)
- 1 medium Onion, finely sliced
- 1 small Carrot, julienned
- 1/2 cup Bell peppers (mixed colors), thinly sliced
- 1/2 cup Cabbage, shredded
- 1/4 cup Green beans, chopped
- 2 cloves Garlic, minced
- 2 tbsp Oil (olive or sesame oil works well)
- 1-2 Green chilies, slit (optional, for spice)
- 1 tsp Soy sauce
- 1 tsp Chili sauce (optional)
- 1/2 tsp Vinegar
- Salt and pepper to taste
- Fresh coriander or spring onions for garnish
For a simple spice mix (optional):
- 1/2 tsp Black pepper powder
- 1/4 tsp Turmeric powder
- 1/2 tsp Red chili powder or paprika
- A pinch of Hing (asafoetida)
Instructions:

Prepare the Millet Noodles:
- Bring a large pot of water to a boil. Add a pinch of salt and a few drops of oil to prevent the noodles from sticking.
- Cook the millet noodles as per the package instructions (usually about 5-7 minutes). Drain and rinse them under cold water to stop the cooking process. Toss with a teaspoon of oil and set aside.

Sauté Vegetables:
- Heat 2 tablespoons of oil in a large wok or pan on medium heat. Add minced garlic and green chilies, and sauté for 30 seconds until fragrant.
- Add the sliced onions and sauté until they turn translucent.
- Add the carrots, beans, bell peppers, and cabbage. Stir-fry on high heat for 3-4 minutes until the vegetables are slightly tender but still crunchy.

Seasoning and Sauces:
- Add soy sauce, chili sauce (if using), and vinegar to the sautéed vegetables. Mix well and cook for a minute.
- If you're using the spice mix, add black pepper, turmeric, red chili powder, and hing. Stir well to coat the vegetables.

Add Noodles:
- Add the cooked millet noodles to the wok with the vegetables. Toss everything together gently, ensuring the noodles are well mixed with the vegetables and sauces.
- Adjust salt and pepper to taste.

Serve:
- Garnish with fresh coriander leaves or chopped spring onions.
- Serve hot, with a side of ketchup, chutney, or your favorite dipping sauce.
