Millet Noodles Recipe

Ingredients:

  • 200g Millet Noodles (Kodo, Barnyard, Little, Foxtail,  or Multi millet noodles can be used)
  • 1 medium Onion, finely sliced
  • 1 small Carrot, julienned
  • 1/2 cup Bell peppers (mixed colors), thinly sliced
  • 1/2 cup Cabbage, shredded
  • 1/4 cup Green beans, chopped
  • 2 cloves Garlic, minced
  • 2 tbsp Oil (olive or sesame oil works well)
  • 1-2 Green chilies, slit (optional, for spice)
  • 1 tsp Soy sauce
  • 1 tsp Chili sauce (optional)
  • 1/2 tsp Vinegar
  • Salt and pepper to taste
  • Fresh coriander or spring onions for garnish

For a simple spice mix (optional):

  • 1/2 tsp Black pepper powder
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Red chili powder or paprika
  • A pinch of Hing (asafoetida)

Instructions:

  1. Prepare the Millet Noodles:

    • Bring a large pot of water to a boil. Add a pinch of salt and a few drops of oil to prevent the noodles from sticking.
    • Cook the millet noodles as per the package instructions (usually about 5-7 minutes). Drain and rinse them under cold water to stop the cooking process. Toss with a teaspoon of oil and set aside.
  2. Sauté Vegetables:

    • Heat 2 tablespoons of oil in a large wok or pan on medium heat. Add minced garlic and green chilies, and sauté for 30 seconds until fragrant.
    • Add the sliced onions and sauté until they turn translucent.
    • Add the carrots, beans, bell peppers, and cabbage. Stir-fry on high heat for 3-4 minutes until the vegetables are slightly tender but still crunchy.
  3. Seasoning and Sauces:

    • Add soy sauce, chili sauce (if using), and vinegar to the sautéed vegetables. Mix well and cook for a minute.
    • If you're using the spice mix, add black pepper, turmeric, red chili powder, and hing. Stir well to coat the vegetables.
  4. Add Noodles:

    • Add the cooked millet noodles to the wok with the vegetables. Toss everything together gently, ensuring the noodles are well mixed with the vegetables and sauces.
    • Adjust salt and pepper to taste.
  5. Serve:

    • Garnish with fresh coriander leaves or chopped spring onions.
    • Serve hot, with a side of ketchup, chutney, or your favorite dipping sauce.
