
Millet as rice

Ingredients:
- Millet - 1 cup (serves 4 people)
- Water - 2 to 2.5 cups (depending on desired texture)
- Salt - to taste (optional)

Rinse and Soak:
- Rinse the millet thoroughly under running water to remove any dirt or impurities, and soak overnight or at least 2 hours.

Toast (Optional):
- Toasting millet before cooking adds a nutty flavor. In a dry skillet over medium heat, toast the rinsed millet for about 3-4 minutes until it gives off a mild aroma. This step is optional but enhances the flavor.

Boil Water:
- In a medium-sized pot, bring 2 to 2.5 cups of water to a boil. The amount of water depends on how soft you want the millet to be. Use 2 cups for a fluffy texture and 2.5 cups for a softer texture.

Cook Millet:
- Add the rinsed (and toasted, if done) millet to the boiling water.
- Add salt to taste if desired.
- Reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer for 15-20 minutes or until all the water is absorbed and the millet becomes tender.

Rest:
- Once cooked, remove from heat and let the millet sit covered for about 5 minutes to allow it to steam and become fluffier.

Fluff and Serve:
- Fluff the millet with a fork before serving. It can be used just like rice in any meal, served with curries, stir-fries, or side dishes.
Tips:
- For a pressure cooker or instant pot, use 1 cup of millet with 2 cups of water. Cook for 1 whistle (if using a pressure cooker) or for 10 minutes on high pressure (instant pot), then let the pressure release naturally.
- You can also add a teaspoon of oil or butter to the cooking water for extra flavor.
Millet is a great alternative to rice, rich in fiber and nutrients, and it complements a wide range of dishes.
