Lemon Rice with Millet

Ingredients:

  • Millet (Foxtail, Kodo, or Little Millet) - 1 cup
  • Water - 2.5 cups
  • Turmeric powder - 1/2 teaspoon
  • Salt - to taste
  • Lemon juice - 2-3 tablespoons (adjust according to taste)
  • Oil - 2 tablespoons
  • Mustard seeds - 1 teaspoon
  • Chana dal (split chickpeas) - 1 tablespoon
  • Urad dal (split black gram) - 1 tablespoon
  • Green chilies - 2, slit lengthwise
  • Dry red chilies - 1-2
  • Ginger - 1 teaspoon, finely chopped
  • Curry leaves - 8-10 leaves
  • Asafoetida (Hing) - a pinch
  • Peanuts or Cashew nuts - 2 tablespoons

Instructions:

  1. Rinse and Cook the Millet:

    • Rinse the millet thoroughly under running water.
    • In a pot, bring 2.5 cups of water to a boil. Add the rinsed millet, turmeric powder, and a pinch of salt.
    • Lower the heat, cover, and let it simmer for 15-20 minutes or until the millet is tender and the water is absorbed. Fluff the millet with a fork and set aside.
  2. Temper the Spices:

    • Heat oil in a pan over medium heat.
    • Add mustard seeds and let them splutter.
    • Add chana dal and urad dal, and fry until they turn golden brown.
    • Add the peanuts or cashew nuts and sauté until they are roasted well.
    • Add green chilies, dry red chilies, chopped ginger, and curry leaves. Sauté for a minute.
    • Add a pinch of asafoetida (hing) and mix well.
  3. Mix in the Millet:

    • Add the cooked millet to the pan with the tempered spices.
    • Mix gently to combine all the ingredients. Be careful not to mash the millet.
    • Turn off the heat and add lemon juice. Mix thoroughly to evenly coat the millet with the lemon flavor.
  4. Adjust and Serve:

    • Taste and adjust salt or lemon juice as needed.
    • Serve the Lemon Millet Rice warm, garnished with a few extra curry leaves or roasted peanuts for added crunch.

Tips:

  • Adjust the quantity of lemon juice according to your taste preference.
  • For extra flavor, you can also add a bit of grated coconut as a garnish before serving.
  • This dish pairs well with coconut chutney or a simple raita.
